Though it isn't necessary to brown chicken first, flavor is often enhanced by browning, and fat is decreased. Dredging chicken in flour, browning, then deglazing the pan with wine, a little vinegar, or broth and adding that to the pot can make quite a big difference in flavor.

CHICKEN AND DUMPLINGS CROCK POT RECIPE

For A 3-1/2 Quart Crockpot:

1 (3 lb.) chicken, cut up
1/2 cup chicken bouillon broth
2 tsp. salt
1/2 tsp. pepper
1/2 tsp. poultry seasoning
3 stalks celery, cut in 1 inch pieces
3 small carrots cut into 1 inch pieces
2 cups packaged biscuit mix
3/4 cup milk
1 tsp. parsley flakes

Wash chicken pieces; cut away excess fat. Place raw chicken pieces in a crock with largest bony pieces on the bottom. Add bouillon broth; sprinkle chicken with salt, pepper, poultry seasoning. Add celery and carrots on top. Cover. Place crock into outer shell; cook. For 3 1/2 quart: Cook on Low setting, 8 to 10 hours or High setting 4 to 4-1/2 hours.

Combine biscuit mix, milk, parsley flakes; stir until just moistened. Drop dumpling mixture by spoonfuls (about 8) over steaming chicken; cover, cook on High setting 30 minutes in 3-1/2 quart. (Do not remove the cover during the steaming of the dumplings). Serve immediately - when dumplings are at their best. 

CHICKEN CACCIATORE CROCK POT RECIPE

2 medium onions, cut thin
2-1/2 to 3 pounds chicken pieces
1 clove garlic, minced, or garlic powder
1 can tomatoes
1 (8 ounce) can tomato sauce
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons crushed oregano
1/2 teaspoon crushed basil
1/2 teaspoon celery seed
1 bay leaf
1/4 cup dry white wine

Put onion in bottom of crockpot and add chicken pieces. Add remaining ingredients. Cook 6 to 8 hours on LOW heat. Serve over hot buttered spaghetti.

CHICKEN CHILI CROCK POT RECIPE

Chicken chili recipe, you can substitute Turkey

5 large chicken breasts, chopped up into 1 inch strips
2 cans kidney beans, drained and rinsed under warm water
2 cans whole canned tomatoes
2 cans canned corn niblets
1 yellow onion, chopped into 1 inch ring segments
5 tablespoons chili powder (OR if you want to give it a real kick, 3 Tbl
Chili Powder and The seeds of one whole Red Chili pepper)

Put rinsed kidney beans on the bottom of the slow cooker. Next add Corn Niblets. Place 1/2 the Chili Powder on top of the corn and beans. Pile on the chicken slices. Pour in Tomatoes. Cover with remaining chili powder. Add the onion last as it is the softest thing in there. I cook mine for about 6 hours on High. It depends on how you like yours, six hours gets all the juices to almost a sauce like consistency. If you want a runnier chili cook it for 5 hours. 10 minutes before you serve it, put it in bowls and add tortilla chips and Monterey jack cheese on top of it. Serve with cornbread.
